cookies is very sensitive, i think other bread is more sensitive but, cookies we use to make in the shorter time. so, we need to busy for making cookies. we can guess cookies with floure, and how long you mixed , sugar, fat, and eggs. actually every ingredients in cookies effect to cookie.
so for successful dough, you need concern about every ingredients and temperature and making time.
and for drop cookies, it will spread during on the process.
